The share of every bet the casino keeps on average over the long run. A 2.7 percent edge on European roulette means €2.70 per €100 wagered, averaged over thousands of spins. Any single session can land far from that.
Why does blackjack have two very different figures?

Because the rules move the edge. A 3:2 blackjack payout with the dealer standing on soft 17 and basic strategy gives about 0.5 percent. The same game paying 6:5 on blackjack roughly quadruples the house edge, which is why the tables on this site flag 6:5 games.
What does pace have to do with it?

Expected cost is edge times money wagered, and money wagered is bet size times decisions per hour. Online slots run 500 or more spins an hour; a live baccarat table runs about 60 hands. The same €2 bet costs ten times more per hour on the slot.
Is a lower house edge always the better choice?

For your bankroll, yes. For entertainment, that is your call. The point of the calculator is that the choice is made with the number in view.
